Fort Collins’ first official brewpub, CooperSmith’s is excited to announce another new chapter in its storied history in Old Town Fort Collins. The local brewery and restaurant recently signed a lease to reoccupy a portion of its former Poolside location at #7 Old Town Square, introducing an all-new concept tentatively set to open late this fall.
While the new venue will occupy part of the space that formerly housed CooperSmith’s Poolside, which closed in 2022, this is not a simple reopening. Instead, the space will be reimagined, reflecting a fresh, modern approach to gathering while retaining some of Poolside’s charm.
The concept will feature counter service with a simplified, snackable menu focused around pizza by the slice and easy-to-eat bar snacks. The redesigned space will span 5,300 square feet, significantly cozier than the original 8,000-square-foot Poolside as it now neighbors the new Visit Fort Collins Welcome Center. Additionally, it will feature seven pool tables and a curated selection of board games, cards, and lounge-style seating, creating a welcoming atmosphere for casual socializing and post-dinner hangouts. Multiple TVs throughout the space will also give it a vibrant sports bar energy.
One of the most exciting physical changes is the repurposing of the former beer production area on the west side of the building into all-seating, including a private rental space designed for groups of 30–40 people. An additional garage-style door will be installed to enhance the space’s indoor-outdoor feel.
CooperSmith’s is once again collaborating with Salt Design and Thunderpup Construction, the teams behind the Pubside remodel that took place earlier this year. The space officially transfers to CooperSmith’s on July 15, with a tentative opening date in November.
