The holidays have descended upon Northern Colorado, blanketing downtowns in twinkling lights, Christmas trees and tasty treats. One business in particular has undergone a complete holiday transformation: The Post Chicken & Beer in Downtown Fort Collins.
On Monday, Nov. 20, the fried chicken restaurant and brewery was taken over by Miracle, a holiday pop-up bar that brings festive cocktails and over-the-top holiday decor to food and drink establishments across the world. The operation decked out The Post with Christmas lights, pine boughs, colorful balloons, frosted windows and everything in between—even the drinks are served in holiday mugs and glasses, which are also for sale.
The 2023 Miracle menu features these boozy beverages:
- Christmapolitan: This herbal, cosmo-style drink is made with vodka, elderflower, dry vermouth, spiced cranberry sauce, lime, rosemary and absinthe.
- Christmas Carol Barrel: A favorite among dark liquor lovers, this whiskey cocktail combines Irish whiskey, banana liqueur, Jamaican navy strength rum, Guinness punch, lime, aromatic & chocolate bitters and nutmeg.
- Snowball Old-Fashioned: Another whiskey creation, the Snowball Old-Fashioned marries the spice of rye whiskey and aromatic & wormwood bitters with the sweet taste of gingerbread and orange essence.
- Koala Cooler: Served with a tiny stuffed koala bear on the side, this tart drink contains applejack, blanc vermouth, aquavit, spiced apple, lime, celery shrub, eucalyptus bitters, mint and soda.
- Marshmallow & Unicorns: This creamy cocktail blends gin with vanilla liqueur, velvet falernum, cherry liqueur, cardamon, black pepper, marshmallow, lemon, egg white, tiki bitters and soda.
- Elfing Around #2: Wine enthusiasts will love this bubbly take on mulled wine as it’s mixed it with cognac, champagne, lemon, aromatic bitters and absinthe.
- Yippie Ki Yay Mother F****r!: As the name suggests, this rowdy rum drink combines Barbados rum, rhum agricole, Trinidad overproof rum, ube & coconut orgeat and acid-adjusted pineapple juice.
- Jingle Balls Nog: A sweet and savory take on eggnog, the Jingle Balls Nog adds cognac, cream sherry, almond milk, vanilla and nutmeg to the traditional egg and cream cocktail.
- Christmas Cricket: This minty green cocktail is made with blanco tequila, vanilla liqueur, minty amaro, coco pandan, cream and mole bitters.
- Rudolph’s Replacement: Get your caffeine fix with this vodka cocktail that features coffee liqueur, white creme de cacao, orange curaçao, chai, almond milk and aromatic bitters.
- Hot Buttered Rum: Served hot, this buttery treat blends aged Jamaican rum with velvet falernum, mixed spiced butter, oat milk and nutmeg.
- Nice Shot: A sweet shot of rye whiskey and gingerbread.
- Naughty Shot: A tart, spicy shot of tequila, habanero, ginger and hibiscus.
Try the cocktails and soak in the Christmas cheer from 11:30 a.m.-9 p.m. Monday through Friday and from 10 a.m.-9 p.m. Saturday and Sunday. The Post is hosting Miracle through Dec. 31, and at the end of the season, the organization will donate 10 percent of sales from the Santa Pants, Christmas Carol Barrel and Santa Heads signature glassware to the Seva Foundation.
