Rio Grande Mexican Restaurant Expands to Downtown Loveland

Loveland location marks the sixth outpost for Colorado’s beloved Tex-Mex institution

A Colorado institution known for its legendary margaritas and vibrant Tex-Mex cuisine, Rio Grande Mexican Restaurant (The Rio) is expanding to Loveland, marking its sixth location in the state. Slated to open in early 2027, the Loveland Rio will be located at 225 4th St. in the heart of downtown Loveland.

“Back in 2024, we mapped out a five-year plan that included opening a new Rio in 2027,” says Pat McGaughran, founder and owner of The Rio. “Historically, we’ve thrived in the heart of the action in larger towns throughout Colorado, but over time, we’ve seen smaller markets evolve into vibrant, energetic food scenes. Loveland is exactly that: It’s a community with character, momentum and a real appreciation for good food and fun times. It’s the kind of community we’re excited to be part of.”

Since opening its first location in 1986, The Rio has become a staple across Colorado, with outposts in Denver (The Rio on Wazee), Boulder, Fort Collins, Lone Tree and Greeley. The Loveland location reflects both the brand’s continued growth and its commitment to expanding thoughtfully when the right opportunity arises.

“This has always been part of our plan: to grow when the timing is right and we have the team in place to do it well,” McGaughran says. “Opening a restaurant takes a lot of dedication and hard work, but it’s what we love to do. Get ready, Loveland: Fun is on its way.”

The Rio Loveland will feature the same classic menu as the other locations, with wholesome Tex-Mex flavors made with intention and care. From flame-grilled fajitas and fresh tortillas to house-made salsas and its iconic margaritas, the menu has something for everyone.
