While the buzz has been brewing for a few months, Luna’s Tacos & Tequila is ready to open its doors in beautiful Windsor, Colorado (1246 Automation Drive) on April 1, 2024. The restaurant first opened in Greeley in 2018 and serves up some of Northern Colorado’s most creative and unique modern Mexican food.
“We believe life is best enjoyed over good food and great spirits, and that’s exactly how Luna’s story began,” says Samantha Corliss, co-owner of Luna’s Tacos & Tequila. “We have a true respect for authenticity and a passion for creativity. We strive to source locally whenever possible, and love supporting small, local, family-owned businesses like our own.”
Luna’s in Windsor will be adding some fresh new menu items to compliment the classics. New items at the Windsor location include Honey Adobo Elotes, Nashville Hot Chicken Chicharrones and a General Tso taco. With a dedicated gluten-free fryer, the Windsor menu will also have the same robust vegan and gluten-free offerings.
Luna’s bar menu features freshly squeezed juices, imported and local craft brews and handcrafted Mexican spirit cocktails made with 100 percent agave tequila. The tequila and mezcal collection at Luna’s is one of the best in the state, featuring some small production expressions that are difficult to find elsewhere.
“With two floors, a rooftop patio with a killer view and some exciting new large format, shareable cocktails, we’re excited to bring the coolest gathering space Northern Colorado has ever seen,” says Brian Seifried, co-owner of Luna’s Tacos & Tequila. “Community is everything to us, and we couldn’t be more excited to expand the Luna’s concept and bring our tacos and tequila to even more of our friends in Northern Colorado.”
Luna’s Windsor location is open daily for dine-in, take-out and delivery. The restaurant is open Monday through Thursday from 11 a.m.-10 p.m., Friday from 11 a.m.-11 p.m., Saturday from 9 a.m.-11 p.m. and Sunday from 9 a.m.-10 p.m. Luna’s serves brunch on the weekends from 9 a.m.-2 p.m.
